Sugar-Free Chocolate Chip Cookies with SweetMonkfruit
These soft, chewy chocolate chip cookies are made with SweetMonkfruit instead of sugar, giving you the same delicious flavour with fewer calories and no added sugar spike. Perfect for anyone looking for a better-for-you indulgence.
Ingredients (Makes 18 Cookies)

1 ½ cups (180 g) all-purpose flour

½ tsp baking soda

¼ tsp salt

½ cup (115 g) unsalted butter, softened

¾ cup (150 g) SweetMonkfruit powder

1 large egg

1 tsp vanilla extract

1 cup (170 g) sugar-free chocolate chips
Instructions

Preheat the oven
Set oven to 350°F (175°C) and line a baking sheet with parchment paper. -
Mix dry ingredients
In a medium bowl, whisk together flour, baking soda, and salt. Set aside. -
Cream butter and SweetMonkfruit
In a large bowl, beat softened butter and SweetMonkfruit with a hand mixer for 2–3 minutes until light and fluffy. -
Add wet ingredients
Beat in the egg and vanilla extract until fully combined. -
Combine wet and dry
Gradually mix dry ingredients into the wet mixture until a dough forms. Fold in chocolate chips. -
Shape and bake
Scoop tablespoon-sized balls onto the prepared baking sheet, spacing them 2 inches apart. Bake for 9–11 minutes, until edges are golden but centres remain soft. -
Cool and enjoy
Let cookies cool on the sheet for 5 minutes before transferring to a wire rack.
Baking Tip: For a chewier texture, slightly underbake and let the cookies finish setting on the baking sheet.
